Learn how to make kransekake – a traditional Norwegian wreath cake

What is this cake?

Made of just almonds, powdered sugar and egg whites, kransekake is quite simple.

The making of it requires time, effort and some skills, though. If you have the time, and are prepared to put in the effort, I will show you the how-to.

Kransekake is perfect for any occasion!

In Norway, kransekake is traditionally served at big celebrations: Christmas, Constitution Day, anniversaries, weddings, baptisms, confirmations, and so on.

But it’s just as well-suited for the smaller moments. Bring it to a holiday or summer party at your band, choir, or school. Serve it at an intimate birthday gathering – or to an unexpected guest on an ordinary afternoon.

Kransekake freezes beautifully – some even say it gets better with repeated freezing and thawing. I recommend keeping some in your freezer. It thaws in minutes, so your surprise guest won’t have to wait long. When the coffee’s ready, the cake is too.

And if you're lucky enough to have leftovers? Just pop them back in the freezer – they’ll be just as delicious at the next occasion.
